Sesame Medallions
Seitan
250 G Whole Wheat Flour
250 G White Flour
320 ml water
 
Stock
2 carrots
1 onion
Soy sauce
Sugar
Garlic
Ginger
 
Knead the dough for 10 minutes, and then wash out all the starch for 10 minutes.
Break into small balls and cook in stock for 3 hours until well flavored.  Sautee seitan with steamed broccoli and coat with sesame seeds, soy sauce, sugar.
 
Organic Quinoa
 
1 cup quinoa
2 cups water
 
Candied sweet potatoes steamed and tossed with honeyed walnuts
 
3 Sweet potatoes
50 g walnuts
2 tbs honey
 
Steam sweet potatoes, toss with walnuts and honey
 
Sautéed Wild Mushrooms
 
Oyster mushroom
Button mushrooms
Shitake mushrooms
Garlic
Butter
Parsley
 
Sautee wild mushrooms in butter, garlic and parsley
 

Saturday
Breakfast
 
Brown Rice Porridge
 
1 cup  brown rice
3 cups water
1 cup milk
spices
brown  sugar
dates
cinnamon
 
Cook all ingredients together for about an hour or until soft.
 
Vanilla flavored Cashew Cream
 
500 g cashews soaked in apple juice
50 g dates
 
blend all ingredients in a food processor
 
Stewed fruit
 
Dried fruit cooked with water
 
Lunch
 
All Raw
 
Gazpacho Soup
 
10 tomatoes
1 capsicum
1 red onion
1 bunch coriander
juice of 1 lime
3 cucumbers
1 clove garlic
30  ml vinegar
        
Blend all ingredients together
 
 
Nut Pate
 
500 g sunflour seeds soaked over night
100 g almonds soaked over night
Tamari
30 g sun dried tomatoes
1 bunch parsley
 
blend all ingredients in a food processor
 

Guacamole
 
2 avocados
juice of 1 lime
1 bunch coriander
1 clove garlic
 
Blood orange and wakame seaweed salad
 
2 blood oranges
1 cup dried wakame
1 cucumber
1 carrot
1 tbs vinegar
salt/sugar
 
Dinner
 
Chickpea and Pumpkin Curry
 
250  g dried chickpeas
½ Jap pumpkin
1 can coconut milk
other veggies
5 curry leaves
Palm sugar
Tamarind
Garlic
Ginger
100 g cashew nuts
 
Saag Paneer
 
2 bunches young spinach washed and blanched
100 ml crème
1 block paneer cheese
         1 lt milk
         1 lemon juice
spices
 
boil milk and add lemon, when curds form drain off and press for 1 hour
 
Cook spinach in spices and cream and add paneer at the last minute
 
Kesari Baht
 
300 g semolina
500 g water
100 g ghee
50 g raisons
50 g cashew nut
.5 g saffron
 
Cook semolina in ghee, add other ingredients.
 

Sunday
Breakfast
Fresh Pancakes
 
200 g Buckwheat or rice flour
1 egg
100 ml milk
 
Blend all ingredients
 
Lunch
Miso soup
 
Miso paste
Wakame
Silken tofu
Soy sauce
Veggie stock
 
 
Vegetarian yum cha
 
100 g wheat flour
yeast
50 g water
1 tbs oil
 
Make dough and then let rise for 1 hour,
 
Then roll and stud with wheat meat and other ingredients
