1 cup Semolina
1/2 cup sugar
2 cups hot water
1/2 cup ghee
1/2 cup roasted cashoos
1/4 cup raisons
pinch safron
pinch cardomon
Roast the semolina until nutty, then add hot water ghee and sugar and cook until smooth. Then add rest of ingrediants and serve as a favorite healthy breakfast.
Lemon Rice
4 cups steamed rice
4 lemons juiced
1/4 cup tamarind juice
1 cup grahm dahl (split chick peas)
1 cup orid dahl
1/4 cup sesame seeds
4 sticks curry leaves
1 bunch cilantro
1 cup shredded coconut
1/4 cup mustard seed
tumeric
Roast 1/2 dahl, grind and add to to rice, then add lemon juice, tamarind, sesame, cilantro, coconut, mustard seed, tumeric. Then fry remaining dahl with curry leaves and add to rice. Add remaining ingredients and serve.
Mung Bean and Zucchini
1 cup Mung beans
1 lb zuccini (chopped)
1 onion
1/4 cup tamarind juice
1 tbs chilli powder
1 cup grated coconut
Put all ingredients in a pressure cooker and cook for 15 minutes after steam comes up
Mixed Vegetable Curry
1 cup potato
1 cup green bean
1 cup carrot
1 cup green peas
curry paste:
- 1 cup coconut
- 1/4 cup poppy seeds
- 1 onion
- 6 cloves garlic
- 1 knob ginger
- 3 sticks cinamon
- 1 tomato
- 1/4 coriander seeds
- 1 red chilli
Blend paste in blender adding enough water so blade will spin.
Add to veggies and cook in pressure cooker for 15 minutes after it comes up to temp.
chickpea Dahl
1.5 cups split chickpeas
1 cup shredded coconut
1 lemon juiced
1 bunch cilantro
salt
add all ingredients to pressure cooker adding about 4 cups of water. Cook for 15 minutes after temp comes up
Dosa
3 cups rice
1 cup orid dahl(split black mung beans)
1 cup flat rice
soak rice and dahl in water for 3 hours, add flat rice and blend together using only enough water to make a pancake batter consistency. Leave over night until batter has fermented. Then pour on griddle and cook like crepes.
2 cups eggplant
2 cups potatoes, chopped
1 cup split chickpeas
1 cup coconut, shredded
1 tbs tamaring juice
chilli powder
1 onion
1 tbs oil
Add all ingredients into pressure cooker and cook for 15 minutes once temp comes up
2 lbs okra, washed and dried thoroughly
1 cup coconut, shredded
1 tbs tamarind juice
1 onion
Fry Okra until reduced to 1/2 size. Blend coconut, onion and tamarind juice and add to okra and continue to cook for 5 minutes.
1 cup coconut, shredded
1 bunch cilantro
3 green chilis
1 tbs tamarind juice
Blend all ingredients in blender with water until smooth
2 cups flour
1/2 cup oil
water to mix
salt to taste
Kneed flour, oil and water into dough and then flatten and fry on each side
